Peach Blueberry Smoothies

In the name of saving money, I bought a “value-sized” vat of granola at the warehouse store.  When staring at multiple pounds of name-brand granola for a reasonable price with a coupon for an additional $3 off wilting in my sweaty paw, I thought it was perfectly reasonable for that to be my breakfast for the next billion years.  It would be irresponsible NOT to buy such a quality breakfast item at such a bargain.

Except by the time I was on my 51st bowl of the stuff, staring expressionlessly into the bottomless vat, I was done.  Granola burn out.  No amount of cold milk or creamy yogurt could save me from the morning boredom of that mix of oats, nuts and dried fruit chips.

Like a ray of August sunshine, those peach slices I froze last summer beamed out to me from the freezer, just pleading to be able to free me from the clutches of that warehouse bucket of cereal.  Add in some frozen blueberries, a little dairy and a few add-ins and I had a luscious, invigorating smoothie with a bright taste and velvety texture that was a welcome change from the too-familiar flavor and crunch of granola.

With a cup of peaches and 1/3 cup of blueberries, this smoothie packs a huge punch of fruit and the accompanying vitamins and antioxidants and is sweet and tasty without added table sugar or artificial sweeteners.  If you are making these in winter like I am, make sure you use frozen fruits to get the most taste and nutrition and to get a good cold smoothie.  Frozen fruits from the grocery store are fine if you didn’t preserve your own–I used an organic variety of store-bought blueberries and they were fantastic–much more concentrated flavor than I could get from fresh blueberries in February.

I packed my peach slices in their juices–if you packed yours in syrup, I’d rinse them before adding to the blender or risk a super sweet breakfast.

I’m sure I’ll be back to my granola soon enough but for now, I feel transported back to peach season, during breakfast anyway.

Peach Blueberry Smoothies

Serving Size: Makes 1 serving

Ingredients

  • 1 cup peach slices
  • 2 tablespoons peach juice or nectar
  • 1/3 cup blueberries
  • 1/2 cup low fat yogurt, plain or vanilla flavored
  • 1 teaspoon ground flaxseed meal
  • 1 teaspoon wheat germ
  • 2 teaspoons honey
  • Milk

Instructions

Add all ingredients to a small blender (I used the Magic Bullet) and blend until smooth. Check the consistency and add a few tablespoons of milk if too thick.
